
Ingredients:
- 250g pasta of choice
- 200g broccoli (about half a medium head)
- 100g grated cheese (cheddar or parmesan, or a combination of both)
- 150g frozen peas
- Big handful baby spinach
- Optional: Dash of cream or 1 tablespoon of cream cheese
- Extra cheese for topping, and a few black olives if you fancy giving the monster face a go. No points deducted for skipping this step.
Method:
- Cook pasta according to pack instructions.
- While pasta is cooking, chop the broccoli into small pieces (1-2cm) and grate the cheese.
- In a separate saucepan, boil the broccoli and peas in 1 cup of water for 2-3 minutes, until soft. Add the spinach for the last 30 seconds with the lid on.
(Note: you'll need to keep an eye on the water level, as different saucepans will allow evaporation at different rates. If the level gets very low add an extra half a cup to keep it all cooking. - Once pasta is cooked, drain and add back into the saucepan off the heat.
- Once veg is cooked, drain the water into a mug and tip the veg directly into the body of your blender.
- Add 1/2 cup of the cooking water and the cheese, and blitz until smooth. Continue adding cooking water until you achieve the sauce consistency you like.
Tip: If your little one prefers a creamier sauce, you can add a dash of cream or tablespoon of cream cheese to the mixture, too. - Once you've got the sauce looking good, tip it into the saucepan with the pasta and stir to combine.
- Serve with extra cheese! (And monster face, if you like).
