Imagine enjoying the delicious, cooling, sweet experience of ice cream on a hot day whilst also getting a couple of serves of core food groups into your little one's tummy, ticking nutrition boxes for fibre, vitamins (potassium!), calcium and even a bit of protein.
Well, you can. Banana n-ice cream is your new (super cool) best friend. There's no churning here, either. Just freeze, blend and freeze again. Brrrrr-illiant.
Ingredients:
3 ripe bananas (very ripe is great)
1/2 cup Greek yoghurt
Optional:
A little maple syrup to add extra sweetness (no need for young children, but adults/older kids may enjoy this)
Method:
Chop each banana into 5-6 small chunks and pop onto a try / large tupperware. Freeze bananas for 2 hours, or until quite frozen.
Remove from the freezer and add to a blender, along with yoghurt and maple syrup (if using), then blend until a thick and smooth consistency.
Pour the mixture into a sturdy tupperware and pop it back in the freezer for a while (15-20 mins should be enough) to freeze.
That's it! Scoop and enjoy in a cone / bowl or with your favourite toppings (chopped fresh berries and chia seeds add extra nutrition, or if you want something a little more 'treat-y', mini m&m's are super fun too)
Tip:
For a colourful variation, swap 1 banana for 1 cup frozen raspberries or blueberries.
